Sommelier Pick of the Week: Payout Cabernet Sauvignon 2013
My first Pick of the Week is Payout’s 2013 Cabernet Sauvignon. From winemaker Brian Graham, this California cab is a classic big red that easily pairs with red meat. The palate is mainly dominated by darker fruits: cherries, currant jam, and plum. To balance out all the heavy ripe fruit, the wine also has notes of cedar wood and oak at the finish, due to its fermentation in French oak barrels.
